My take on a favourite Canadian Dish, mashing it up with Typical Reckless American abandon, with a Creole adaptation of a French Classic. That being said, this starts with Home fries as a Base, top that with Smoked Duck and Rabbit Cassoulet (Duck, Rabbit, Ham Hocks, Country Sausage, Andouille Sausage, Beef Sausage and White Beans Slow Smoked, Picked, in a Gravy Made from the Pan Drippings of The Cassoulet), and then topped with Fresh Cheese Curds.
+Add a Pair of Fried Eggs on Top for $2.00

Here’s a Little wrinkle worth knowing. All of our packaging; to go boxes, Napkins, silverware, cups, straws, lids, EVERYTHING is biodegradable, compostable or both. They are designed to disappear in 90 days in a properly managed landfill or composting facility. We only have one planet, right now it’s a mess. The only way we will get it cleaned up is if everyone does their part. We believe that this incredibly important, and are trying to do ours.
Also I buy organic, local and sustainable, wherever and whenever possible. Our Seafood is Wild Caught not Farmed, and you can find some of my suppliers right here in the market house.
Compleat, for our dried goods, milk, and yogurt.
Millers for meats and sausages.
Fitz’s for some of our produce.
Conrad’s for the deli items we don’t produce ourselves.
While Hartmann’s was here we got our apples, pears, peaches, and quince there.
In short I try to put my money where my mouth is. Without supporting our local economy, our farmers and other local producers or purveyors, it will die. I choose not to let this happen. By supporting us, you also support them, and who knows, in going about their lives, they may support you.
